Freezer Breakfast Burritos

Recently, I found a fantastic sale on eggs. So fantastic I bought 72. πŸ˜‚ So I thought I would share a really good freezer breakfast burrito recipe that used 20 eggs.

I scrambled 20 eggs with a splash of almond milk (makes them extra fluffy), salt and pepper. I cooked some chorizo too. You can use pre-cooked sausage crumbles for even less work. I would have, but my grocery store was out.

I used a bag of Mexican shredded cheese, a jar of salsa, a frozen bag of sliced peppers and onions and 2 8 count burrito tortillas.

I scooped a little egg, chorizo, salsa, cheese, peppers and onions on each tortilla. Rolled them up and wrapped individually in press and seal. I store mine in a gallon freezer bag.

When you’re ready to eat one, just pop it in the microwave wrapped in a paper towel for a minute or a minute and a half until heated through.

You can make a lot of fun varieties of these!
